Nourishing Chicken Soup


A cuddle in a cup.


The beauty of a slow cook, is a beautiful nourishing meal, that you feel like someone else has cooked for you when you walk in the door (anyone else feel like that??).


This soup is full of essential amino acids that support both the gut and the immune system.


This is a great meal, to portion out left overs for the week for easy lunches and dinners.


I hope you enjoy it as much as I do :)



Ingredients:

  • 1 Onion (diced)

  • 4 stalks Celery (diced)

  • 3 Carrot (medium, chopped)

  • 1 tbsp Rosemary (fresh)

  • Whole Roasting Chicken (regular chicken)

  • Sea Salt & Black Pepper (to taste)

  • 6 cups Water (or broth)


Instructions:

  1. Add all ingredients to the slow cooker and cook on low for 6-8 hrs

  2. Once chicken is cooked through, remove it from pot, transfer it to a large bowl and shred it with two forks. Return the shredded chicken to the crock pot and let it soak for at least 5-10 minutes before serving. Adjust seasoning as needed.

  3. You can add any amount of vegetables to this to bulk it up. This is a great one to use as left overs, or portion and freeze
